Why I’m Gluten-free

 

One of the questions I constantly get asked is, “Why are you gluten-free?”. For those that are gluten-free, you already know it is rarely a choice.

For me, being gluten-free changed my life.

In 2018 I was diagnosed with pulmonary sarcoidosis, which is a rare inflammatory disease. I had shortness of breath, fatigue, and a long list of random symptoms that would come and go. My life felt completely out of control and I needed to make a change.

My doctors suggested that I start taking prednisone, but I wasn’t convinced that it was the best option for me. I began researching ways to reduce inflammation and decided to do a strict elimination diet with the help of a functional medicine doctor. I only ate whole foods and completely cut out gluten, sugar, caffeine, and alcohol.

It was HARD.

When my functional medicine doctor first suggested that I stop eating gluten and switch to whole foods, I broke down in her office. I loved eating out and socializing and felt like my life would completely change. Pizza, tacos, pasta, and pastries were my favorite foods and I honestly couldn’t picture my life without them.

Thankfully, changing my diet worked for me.

The granulomas in my lungs slowly disappeared, I had more energy, and felt like myself again. I never needed to take prednisone to treat my sarcoidosis and today I am considered in remission.

I’ve slowly added many things back into my diet (like coffee!), but I’m still 100% gluten-free. Becoming gluten-free changed my life and I can’t image ever going back.

What do I miss the most?

Convenience. For me, I have found so many amazing gluten-free substitutes and new foods that I don’t miss gluten. Instead, I often miss the convenience I being able to buy a soft pretzel or a slice or pizza when I’m out and about.

Why did I start Gluten-free Vacations?

When I first started eating gluten-free, I was embarrassed to order food at restaurants and felt like a burden. The entire process opened my eyes to how those with dietary restrictions eat out and travel. I started Gluten-free Vacations in 2021 with the hopes of helping others that are also gluten-free. Thankfully, there are some incredible resorts that can help gluten-free travelers and they even have options to allow you to indulge!

95% of my clients have celiac disease, but I’m here to help anyone that is trying to stay away from gluten or has food allergies.
